Do You Prefer Your Fish Served Skin Up or Down?

When I had a Groupon lunch at the Cadogan Arms in London with Sean O’Neill we both remarked that we found the serving style of Sean’s sea trout with the skin up pretty unattractive.

I assumed the skin up serving style was to keep the fish warm and moist. I asked one of the serving staff if this was the case. She checked with the chef and yes, what I’d thought was true, but another reason was so that any oil from the fish skin didn’t go onto the vegetables under the fish.
