I’ve stayed at many hotels where breakfast is only served until 10am, even at weekends. Sometimes they even start to clear away the buffet at the end of serving hours, which means you really have to go 30 minutes in advance of closing time. I don’t think that this is conducive to a relaxing stay for guests.  It’s not just about having a long lie, you might want to use the hotel’s leisure facilities or go for a walk before breakfast. Hotels Which Do Serve Breakfast Until (at least) 11am

Apex Hotels serve breakfast until 11am at weekends in all their UK hotels.

Ballyfin Hotel in Co. Laois, Ireland serves breakfast past 11 a.m. at any time that suits their guests.

Glasgow Marriott serves breakfast until 12 noon at the weekends.

Hotel Cerro del Sol in Granada, Spain serves breakfast until 11am every day.

Holiday Inn Express serves breakfast until 11.30 at weekends.
